Cornbread Muffins

This is an excellent recipe for those who love comfort food and yet want something not overly fattening. It’s a healthy, gluten free way to enjoy corn muffins and it partners up super well with soups and chowders for a complete meal.

This is also a super easy recipe! You can mix everything in one bowl and then bake it. Little mess, little fuss, perfect for busy cooks like myself!

Cornbread Muffins

  • Servings: 12 Muffins
  • Difficulty: easy

Ingredients:

  • 1/2 C Coconut Oil- melted
  • 1/4 C Honey
  • 2 Eggs
  • 1 C Buttermilk
  • 1/2 TSP Baking Soda
  • 1/2 C Arrowroot Flour
  • 1/2 C Tapioca Starch
  • 1 C Organic Cornmeal
  • 1 C Organic Whole Corn

Directions:

  1. Preheat oven to 350
  2. Mix your melted coconut oil with the 2 eggs
  3. Add the buttermilk
  4. Add all the remaining dry ingredients and mix well
  5. Add the corn and the cornmeal, mix
  6. Spoon it into greased muffin cups
  7. Bake 20ish minutes until a toothpick comes out clean and they are nicely browned
